in the last year i have been really trying to make dinner alot more. i have found tons of easy, kid friendly recipes...and got this delish dish from my cousin. made it last night and loved it! try it out...its really, really good and so easy!

Honey Lime Chicken Enchiladas
6 tablespoons honey
5 tablespoons lime juice
½ tablespoon chili powder
½ teaspoon garlic powder

1 pound chicken, cooked and shredded (I used 3 small chicken breasts)
8-10 flour tortillas
1 pound monterey jack cheese, shredded
16 ounces green chili enchilada sauce
1 cup heavy cream

Mix the first four ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hour (I tossed mine together in a ziploc bag in the morning and let it sit in the refrigerator all day).
Pour about 1/2 cup enchilada sauce on the bottom of a 9X13 baking pan.
Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas.
Mix the remaining enchilada sauce with the cream and leftover marinade.
Pour sauce on top of the enchiladas and sprinkle with cheese.
Bake at 350 degrees for 30 minutes until brown and crispy on top.

my baby boy is 1
i really cant believe it. our lives changed, our family became 5, happiest day to have another child join our family. i love this little boy more than words can describe. he is the sweetest, happiest, funniest little guy. i am so blessed to be a stay at home mom and watch him every step of the way. Jacob and Kylie adore him, and of course Jason cant get enough of him. here are a few things you should know....
he loves:
  • his sleep...he goes to bed at 7:30, sometimes earlier! this is huge, my kids are late nighters!
  • his dad. when Jason walks in the door from work, he freaks out and starts crawling at him and playing with him. its so cute!
  • Jacob and Kylie. he tries to say their names, its really cute. his face lights up when he sees them.
  • food, of any kind!
  • his grandma. he says "g ma" over and over again!
  • his blanket
  • water. he could spend hours playing in the bath
  • walking...he thinks he is big time now that he does this
  • swinging outside...and going on walks
  • saying "hi" to everyone when we are out and about
  • talking on the phone...and chewing on it.
  • reading books and playing in his room
  • his big boy car seat
  • hide and go seek....and he says BOO!
  • giving kisses...big wet ones!
  • baby Einstein
  • play group on Monday...he loves his friends.

i could go on and on...he is so fun. this is such a fun age! i love him and I'm so happy he is a healthy happy 1 year old!!!

is it spring break.....
or Christmas break??
its a little confusing these days with all this snow...i wish the weather would make it feel like spring break. my kids are not loving being inside looking out the window and the snow falling and falling. well, with that said...we took the kids to see this movie last night. Jake LOVED it! Kylie, well she was a little tired and fell asleep but she loved the parts she saw. and Carson was pretty into it until he decided just wanted to get down and run around (o ya, he walks now!) but the parts i did see of this movie its AMAZING! take your kids to see it...they will love it!
